Andrew Davis and Alfredo Fernandez are quoted in an article by The Food Institute about upcoming bans on so-called forever chemicals – per- and poly-fluoroalkyl (PFAS) – in food packaging. New York and California are the first of more than a dozen states banning or considering bans on intentionally added PFAS in food packaging because they do not break down and may transfer to food and beverage products.  PFAS can make paper or plastic packaging grease resistant and waterproof but are also known to bioaccumulate in animals and humans, and have been linked to cancers, immune system suppression and lower birth weights. Eliminating PFAS in food packaging will likely require difficult conversations with suppliers and partners up and down the supply chain.
